News that Guy Fieri’s Chicken Guy will be occupying the former Steak ‘n Shake on Orlando Avenue in Winter Park, an expansion of his collaboration with Robert Earl, has created quite a hubbub. Not only does it spotlight the shift in consumer tastes from what was just a few decades ago “all things beef” to today’s preference for lighter and healthier chicken varieties, but it also reinforces the enormous power of free enterprise to replace stale concepts with fresh ideas. Austrian economist Joseph Schumpeter’s theory of creative destruction is all too alive as American consumers continue to be the clear beneficiaries of relentless economic innovation.
